Sands Bethlehem Hosts First Sustainable Foods Workshop

In March, Sands Bethlehem hosted its first Sustainable Foods Workshop in conjunction with Las Vegas Sands’ Global Sustainability Program. Six major food and beverage suppliers participated by discussing their company sustainability practices, while providing insight during a roundtable discussion on a myriad of sustainability topics, including trends they’re seeing and challenges they are experiencing. The suppliers were challenged to provide potential sustainable food options and to showcase them at the workshop. The participating suppliers consisted of US Foods, Sysco, Indian Ridge Provisions, Primo Produce, The Chefs Warehouse, and Samuel and Sons Seafood.

The workshop began with introductions from George Nisiotis, Senior Buyer at Sands Bethlehem, along with opening remarks from Brian Carr, Senior Vice President of Finance at the property. Also in attendance was Jenny Yu-Mattson, Executive Director of Global Sustainability at Las Vegas Sands, who provided an overview of Sands ECO360, which was followed by a property-specific sustainability summary from Steve Fernstrom, Sands Bethlehem Sustainability Manager. Victor Bock, Executive Chef at Sands Bethlehem ended the opening remarks by discussing sustainability within the Food and Beverage industry.

“The Sands Sustainability workshop was an enlightening experience,” said Brad Hinderliter, General Manager of Indian Ridge Provisions. “Having multiple suppliers in the same room is always interesting, however I believe that one point we can all agree on is preserving our resources and respecting our surroundings,” Hinderliter continued. “Hearing about different initiatives currently being employed, as well as sharing ideas for the future, put into context how relevant and important these policies are. The fact that we all share a customer that puts sustainability ideals into the fabric of their culture is especially exciting. I not only left the workshop with ideas of products that fit into the Sands ECO360 program but I also left motivated to look at the processes of our own organization.”

The workshop concluded with a sustainable food tasting presented by the suppliers. The workshop was a catalyst for Sands Bethlehem to continue its progress in procuring sustainable foods.
