Nicole Delaney, Ecolab principal chemical engineer and Institutional technical account specialist, discusses the basics of navigating food allergies, including communication, education, current laws and training.  Special guest, Emily Thompson, R.S., C.P.-F.S. Red Robin International, Inc. senior food safety and quality assurance manager, will share real-world examples from their operations and how they put regulations into practice.

Nicole is a principle chemical engineer in the Institutional division of Ecolab and serves as a technical account specialist for the foodservice, kitchen specialty and food safety programs in the United States. With extensive experience in industrial food safety applications, Nicole is considered the subject matter expert on dry processing environments, helping to develop cleaning and sanitation protocols for a number of companies.

From helping to prevent cross-contamination in food processing facilities to providing sanitation and hand hygiene programs for restaurant employees, Ecolab is a global leader in keeping food safe.
