(August 10, 2009) – On August 19th Bravo will premiere the sixth season of its hit series “Top Chef” in which another cast of uber-talented kitchen characters will face off in pursuit of the culinary crown.  Like past seasons, most of the contestants will emerge from restaurant kitchens where they’ve been cooking for a few hundred diners a day.  Bon Appétit Management Company’s Executive Chef Preeti Mistry who runs Charlie’s Café at Google is one stand-out chef who brings a little something different to the table.  Unlike any cheftestant before her, Chef Preeti comes from corporate food service and now oversees the food for one of the most talked about dining rooms in the country where each day she serves 2000 made-from-scratch, seasonal, farm-fresh meals. 

Working for sustainability leader Bon Appétit Management Company and standing at the helm of one of the famed cafés at Google’s headquarters in Mountain View, California, Chef Preeti is no stranger to being a culinary front-runner. With such a variety of palates to please, Chef Preeti draws from her classical French training to build innovative, intensely flavorful dishes and employs strong relationships with local farmers to create vibrant, seasonal menus. 

Though born in London and raised in the U.S., her personal approach to cooking is often a blend of her Indian heritage, international travels, and a California sensibility. “Preeti has pitch perfect taste and incredible instincts. She creates memorable dishes that balance layers of bold flavors with a subtlety that lets the ingredients speak,” says Fedele Bauccio, CEO of Bon Appétit Management Company. “She's proven her mettle in our fast-paced cafes, while catering to diners with grace and humility. Personal experience tells me that her cassoulet alone could win her the title and that the ‘Top Chef’ judges are sure to be wowed.”

While Chef Preeti has always been passionate about food, it wasn’t until September 11, 2001 that she took the leap towards making it her life’s work.  “I’d been working in film and everyone said I should be a chef. I’d thought about it, but was scared. But that day, the only thing that felt right was to go into the kitchen and start cooking. So I did, and I haven’t stopped since.” Over the past eight years, she received her Grande Diplome in Cuisine and Patisserie from Le Cordon Bleu London, worked at The Sugar Club and Moro in London, and launched a San Francisco catering and event firm, before joining Bon Appétit Management Company where she went on to assume the role of top chef at Google’s Charlie’s Cafe. 

Working for Bon Appétit has greatly influenced how Preeti approaches the kitchen: “My commitment to cooking sustainably has been pushed so much farther. I have always believed in cooking seasonally and using local ingredients, and with programs like the Low Carbon Diet, Eat Local Challenge and Circle of Responsibility my commitment to how I source my ingredients and more importantly why has been reinforced in such a way that I don't think I could cook any other way.”

Since 1999, Bon Appétit has trailblazed the path for food service that is committed to environmental and socially responsible practices and to culinary expertise in every one of their 400 cafes and restaurants, and in each of the 120 million meals served annually,  With unparalleled support of  local farms and economies, Bon Appétit’s core programs include Farm to Fork, which requires all Bon Appétit accounts to purchase at least 20% of the foods served in their cafes from local, small to mid-scale, owner operated farms and the Low Carbon Diet, which seeks to lessen the impact that the company’s food operations have on global warming. By 2010, Bon Appétit has committed to reducing the carbon emissions associated with its food service operations by 25% and they are well ahead of schedule thanks to chefs like Preeti who understand how to deliver incredible food that is also eco-friendly.
